White Chocolate Cremeux:

  • 90 g Susu UHT
  • 170 g TULIP White chocolate couverture [lelehkan]
  • 8 g Gelatine powder [Rendam dalam 20 g air dingin]
  • 185 g VIVO Topping Ace

Raspberry glazing:

  • 100 g. Raspberry puree
  • 150 g Air
  • 25 g Glucose
  • 25 g Gula pasir
  • 8 g Maizena
  • 10 g Gelatine powder [rendam dalam 30 g air dingin]
  • 100 g Neutral gel
  • +/- Pewarna makanan merah

Crumble :

  • 100 g Gula Icing
  • 160 g Usalted Butter
  • 50 g Telur
  • 250 g Terigu protein rendah

Bahan Crunchy Crumble

  • 50 g Cocoa butter
  • 50 g TULIP Easimelt Dark Hestia
  • 500 g Crumble
