Chocolate Salami - The Recipe

Ingredients

Vanilla Syrup

  • 300 gram water
  • 50 gram sugar
  • 2 pods vanilla bean
  1. Make sugar syrup and add in the vanilla bean. 

Sable

  • 75 gram Butter
  • 90 gram Flour
  • 20 gram Corn Flour
  • 35 gram Icing Sugar
  • 1.5 gram Salt

Instructions:

  1. Mix all the ingredients, cut into small cubes, 1x1 cm. 
  2. Bake in 160 for 7 minutes
  3. Set it aside until needed 

Chocolate Salami

  • 20 gram Glucose
  • 20 gram Tulip Chocolate Cream
  • 80 gram Tulip Dark Chocolate Compound
  • 20 gram Vanilla Syrup
  • 20 gram Sable
  • 15 gram Pistachio
  • 15 gram Soaked Cranberry (with vanilla syrup)
  • 15 gram Walnut
  • 15 gram Dried Apricot
  • 20 gram Unsalted Butter (Cold, Cube 1x1 cm) 

 

Instructions:

  1. Melt the glucose, add in the vanilla syruo. MIx well. 
  2. Add in the melted Tulip Dark Chocolate Compound Coins and Tulip Chocolate cream. Mix well. 
  3. Add in the rest of the ingredient, fold all the ingredients together
  4. Lay out a cling wrap 
  5. Put the chocolate salami in the cling wrap. Shape into a log. 
  6. Roll and twist the ends to seal
  7. Refrigerate for a least 2 hours, until it’s firm.
  8. Remove the cling wrap. 
  9. Dust all sides with snow sugar/ blanchia. 
  10. Cut to the desired thickness.
