What is Chocolate Ganache?
Chocolate ganache is simply chocolate mixed with another fluid/liquid ingredient. More often than not, a chocolate ganache is made with cream, but it can also be substituted with milk, fruit juice, coffee, eggs and even caramel to make some delicious and wildly unique ganache flavor combinations. A chocolate ganache is incredibly versatile and can be used as a chocolate topping, decoration, icing or as a filling inside pastries and baked goods.
A little tip when making your chocolate ganache, add glucose or invert sugar – invert sugar is a liquid sweetener made from granulated table sugar and water- in your ganache. The purpose is to chemically bond with the water particles in the ganache, in order to make a more stable ganache, while also increasing the shelf life.
